Dim Sum at Shang Palace, Shangri La Singapore

Shang Palace (香宫) at Shangri La Singapore serves classic Cantonese, Shanghainese & Szechuan cuisine emphasizing innovative twist in the presentation of their signature dishes while sticking to the traditional roots of culinary techniques showcasing the art of Chinese fine dining.

In an ambiance rich of Chinese heritage, the main theme for Shang Palace in Singapore is “dining in a Chinese Garden”. Exquisite interior design with floral motifs take centre stage on the red glass ceiling and hand-painted walls.

Upon being seated, we were given a selection of gourmet tea which we decided to try Silver Needle Tea 白 毫 银 针, one of Shang Palace Signature Tea.

It is a non fermented tea from Hunan province, Tong Ting Mountain. This tea was served as a tribute of emperors of past era.

Shang Palace offers a variety of Dim Sum, price & descriptions are stated on their Dum Sum form which you can pass to waitress to place order.

We started with Steamed Gold Sago Prawn Dumpling Ha Kao (金珠鲜虾饺), Steamed Pork Siew Mai with Fish Roe, Prawn & Mushroom (鱼子香菇滑烧卖) & Steamed Teochew Dumpling with Baby Abalone, Pork, Dried Shrimp & Chives (宝绿鲍鱼潮州粉)

The Ha Kao skin was not too thick, filled with juicy, springy & plump prawns. Every bite is filled with satisfaction of the prawn. The Steamed Teochew Dumpling is quite surprising, light with fragrance of chives & hint of dried shrimp, a very unique & creative dish.

Next came the Steamed Rice Roll with Fresh Prawn (鲜虾滑肠粉),Crisp Fried Fresh Prawn Roll with Lychee Mayonnaise sauce ( 沙律荔鲜虾卷),& Xiao Long Bao in Pumpkin Pork Dumpling with Crab Roe (枝蟹黄小笼包).

Another surprising dish is the Fried Fresh Prawn Roll, the fruity & refreshing of the Lychee Mayonnaise blends perfectly well with the prawn. Xiao Long Bao is filled with sweetness of the soup inside, an extra fragrance comes from the pumpkin which was added to the skin thus giving it a beautiful orange colour.

Steamed Turnip Cake (瑶柱蒸萝卜糕) a slight different variation from the usual pan fried, light, non greasy and healthier.  Deep Fried Bacon Roll wrapped with Enoki Mushroom, Prawn & Chicken with Thousand Island Sauce (千岛金菇烟肉卷) would be a great choice for bacon lovers.

Pan Fried & Boiled Sesame Pork Dumpling (双式鸳鸯饺). Prepared in 2 ways, allowing diners to taste 2 distinctive ways in one dish. The sesame sauce is a fine combination with the dumpling enhancing the taste & increasing the flavour.

Fluffy Barbeque Pork Pastry (密汁叉烧酥) as the name implies fluffy & flaky on the outside while sweet & juicy inside filling. Salted Egg York Custard Bun (传统流沙包) molten, creamy, oozing custard with soft buns.

Next is Stewed Lobster Noodles 姜葱龙虾焖生面. Lobster cooked to perfection, noodle wise mediocre.

Usually Chinese desserts are simply plain, common and non creative hence we were delighted Shang Palace offers a new twist in dessert offering.

One of it was Chilled Avocado Pudding with Mango Sauce (牛油果甘露布丁), sweetness of the avocado can be easily tasted, pair well with the mango sauce.

The Chilled Lemon Grass Jelly, Aloe Vera & Lemon Sorbet (香茅青柠芦荟雪芭) is a refreshing light dessert, akin to Ai Yu Bing 愛玉冰. The Lemon Sorbet slight sourness enhances the grass jelly, a dessert to choose if you are too full & yet wanted to end with dessert

Chilled Mango Sago Pomelo (杨枝甘露 ) would be a favorable choice for mango lovers.

Lastly we also tried Yam with Azuki Beans & Tang Yuan (芋头红豆汤圆),a traditional Chinese dessert.

After our pleasant meal, we were introduced to the Dim Sum Chef, Ms Kerene Cheng, the first lady to be appointed to lead Shang Palace Dim Sum culinary team in a male dominated industry. Definitely, a lady Singaporeans should be proud of.

We truly enjoyed our Dim Sum at Shang Palace. The service is excellent, the waitress will advise accordingly and have the initiative to attend to your needs making the dining experience smooth and pleasant.
